  • ½ cup peanut butter (or almond butter)
  • 3 tbsp honey or maple syrup
  • 3 tbsp mini chocolate chips
  • 2 tbsp chia or flax seeds (optional)
  • 1 tsp vanilla extract

Steps

  1. Mix all ingredients together in a bowl until well combined.
  2. Refrigerate the mixture for 20 minutes to firm up.
  3. Roll into tablespoon-sized balls using lightly damp hands.
  4. Store in an airtight container in the refrigerator for up to one week.

Tip: If the mixture is too dry, add an extra teaspoon of honey. If too sticky, add a few more oats.
